For all times and all places, our protagonist today: chicken soup.
Ingredients:
- 2 whole breasts or chicken in pieces
- 1 or 2 bay leaves
- 1 sachet with annatto seasoning
- 3 carrots
- 2 large potatoes
- 1 small onion
- 8 cups chicken broth
- 4 ears of corn
- 1 cup of noodles or your favorite pasta
- 1 tablespoons vegetable oil
- Abundant cilantro
- 1 stalk of celery
- Salt and pepper to taste
Let's cook this delicious soup!
Add the tablespoon of oil to a cauldron or deep pot and heat it over medium heat. Add the sofrito and sauté for 2 minutes, then add the chopped onion, chopped celery stalk, bay leaves and seasoning, stir and cook for one minute. Wash and season the chicken with marinade, and add it to the pot, sauté. Add the carrots (cut into cubes), cook for a few minutes with all the other ingredients. Add the chicken broth to the pot, when it starts to boil, add the corn (cut to your liking) and the potatoes (cut into cubes ).
Test the soup for saltiness, adjusting as necessary by adding more salt and pepper. Cook for about 25 minutes. Add the pasta, let cook for 12 more minutes. Before removing, add the chopped cilantro. And that's it! Serve with white rice, avocado and lemon.
