Ingredients:
1 or 2 bay leaves
1 sachet of achiote seasoning
3 carrots
2 large potatoes
1 small onion
8 cups of chicken or vegetable broth
4 ears of corn
1 cup of noodles or your favorite pasta
1 tablespoon vegetable oil
Plenty of cilantro
1 stalk celery
4 to 5 malagueta balls
Salt and pepper to taste
Let's cook this delicious soup!
Add the tablespoon of oil to a stockpot or deep pot and heat over medium heat. Add the sofrito and sauté for 2 minutes, then add the chopped onion, chopped celery stalk, bay leaves and seasoning, stir and cook for one minute. Add the carrots (diced), cook for a few minutes with all the other ingredients, add the chicken or vegetable broth to the pot and the malagueta balls, when it starts to boil, add the corn (cut to your liking) and the potatoes (diced). Taste the saltiness of the soup, adjust as necessary by adding more salt and pepper. Cook for about 25 minutes. Add the pasta, cook for 12 minutes more. Before removing add the chopped cilantro, serve, a piece of crusty bread is also a great accompaniment!
