Typical in Latin gastronomy, with some regional variations depending on the country. On this occasion, we are going to make the Saboriza version with lots of love.
Ingredients:
3 ½ lbs of chicken cut in pieces
3 cups of long grain rice
3 ½ cups of water
½ cup sofrito
½ teaspoon ground cumin
2 tablespoons olives with capers
1 teaspoon seasoning with coriander and achiote
2 oz tomato sauce
2 tablespoons vegetable oil
Salt and pepper to taste

Season the chicken in advance with the seasonings of your choice, set aside in the refrigerator. At the time of cooking, heat the oil in a pot over medium heat, add the chicken pieces until browned on each side, when you get the desired browning, remove and set aside.
In the same pot, add the sofrito, olives with capers, seasoning with coriander and achiote, tomato sauce and cumin, sauté for about 4 minutes over low heat. After that time, add the rice, mix well, add the water, increase the heat and let it boil. When the rice is getting dry, stir it, lower the heat to the minimum and cover it. Continue cooking for about 20 minutes more, until the rice is tender. Then, stir it and add the chicken pieces, cover the pot again and let it cook for 15 minutes more. Ready! Serve this delicious dish with a nice green salad and enjoy!
