Ingredients:
5 medium potatoes
¼ cup olive oil with achiote
1 cup diced tomatoes
¼ cup sofrito
1 teaspoon minced garlic
½ teaspoon ground cumin
½ lb ground beef
1 raw egg
¼ cup wheat flour
1 tablespoon achiote oil
¼ cup fresh milk

Salt to taste
Now, let's get cooking!
Bake the potatoes in the oven with the skins on. Do this ahead of time so you can let them cool. Then remove the skin, mash them, add a little salt, and set aside.
Prepare the meat stuffing in a medium saucepan, pour the olive oil with achiote, heat, add the tomato, sofrito, garlic, cumin, and cook for several minutes. Add the meat and sauté for 5-8 minutes or until browned and tender, remove from heat and set aside.
In a bowl, mix the flour, egg, oil with achiote, milk and salt to taste, mix until well blended and set aside.
Divide the mashed potatoes in 10-12 portions, you can use a measuring spoon, with each portion you will make a ball with your hands. Flatten and place a spoonful of the filling in the center of the dough and close it forming a ball, making sure to cover all the filling, repeat the procedure with each portion until finished. Place them on a platter or tray.
In a deep frying pan pour the oil to fry over medium high heat. Dip the stuffed potato balls in the flour mixture and fry until golden brown. Place them on absorbent paper towels and they are ready! Serve and serve with your favorite sauce.
