This is a typical delicacy from the Island of Enchantment, Puerto Rico. It is made with a dough stuffed with meat and fried. Just thinking about them makes your mouth water...
Ingredients:
For the dough:
4 lbs of yautÃa or malanga
3 green plantains
1 sachet of achiote seasoning
1 tablespoon of salt
Oil for frying
For the stuffing:
1 pound ground beef
2 tablespoons sofrito
1 teaspoon salt
½ chopped red bell pepper
Let's cook this delicacy!
In a medium skillet, place the sofrito, salt and bell pepper, sauté for a few minutes. Add the ground beef and cook until desired doneness. Then, remove and let cool.
Grate the plantains and yautÃas, you can do it in a food processor, and blend until you make a smooth paste. Add the seasoning with achiote and salt.
On a piece of aluminum foil or waxed paper, place a little oil, then a spoonful of the dough and in the center the filling, mold until the filling is covered.
In a pot place oil, heat over medium high heat, fry until golden brown on both sides (5 to 7 minutes on each side). Drain well on paper towels to remove excess. Serve and enjoy! Enjoy.
