Ingredients:
- 2 pounds pork with skin
- 4 cups of rice
- 4 cups of water
- 1 tablespoon tomato paste
- 1 tablespoon ground oregano
- 1 large red onion (chopped)
- 1 cubanela chili (chopped)
- 1 tablespoon brown sugar
- 3 cloves of garlic (mashed)
- 1 bunch of leek (chopped)
- 1 bunch of cilantro (chopped)
- 1 sachet of marinade with cilantro and annatto
- Salt and pepper to taste
- 1 ½ tablespoons vegetable oil

Season the meat with marinade, salt, oregano, pepper and garlic, set aside. Add the oil to a large pot over medium-high heat, add the sugar until it turns brown, add the meat to give it color, stir constantly, when it browns to the desired point, add the onion, chili and tomato paste. Once it starts to boil, add the rice, tied cilantro, stir frequently until the rice dries. At this point, cover the pot and let it simmer for approximately 30 minutes. Add the leek before serving, and you're ready to enjoy this juicy delicacy. You can accompany it with green salad and avocado.
