Ingredients:

4 lbs of goat drumsticks cut in small pieces
1 sour orange
1 teaspoon oregano
2 teaspoons of crushed garlic
2 cubanela chili peppers
1 tablespoon salt
1 tablespoon vegetable oil
1 tablespoon sugar
1 sprig of chopped cilantro
4 tomatoes, diced
1 chili bell pepper
½ liter of water
½ cup of rum or red wine

Let's cook this delicacy!

Wash the meat in your own way, and set aside. We are going to make the marinade by mixing all the ingredients in a food processor or blender, without the tomato and rum. Add the mixture to the meat and let it marinate in the refrigerator for an hour, or better yet, if you can do this step the night before, this will give it more flavor. Heat the oil in a saucepan over medium high heat. Add the sugar until it turns golden brown, then add the meat until it browns, when it browns to your liking, add the tomato until it caramelizes well and the rum. Finally, add half a liter of water and cook until the meat is tender, ready! Serve this delicious delicacy with some tostoncitos.
