A traditional dish in Latin gastronomy that usually accompanies multiple dishes due to its versatility. You probably know it as stew or casserole, and today we are going to prepare it...
Ingredients:
2 lb of beef cut into small cubes.
2 bay leaves
1 medium onion, chopped
3 garlic cloves chopped
2 cups of water
6 medium potatoes cut in cubes
2 carrots cut into cubes
1 teaspoon seasoning with achiote
1 teaspoon ground oregano
¼ cup fresh cilantro
2 branches of recao
½ teaspoon cumin
Salt and pepper, to taste
3 tablespoons tomato paste
Let's cook this delicacy!
In a large pot, put the beef, bay leaf, onion, garlic and water (just enough to cover). Cook covered over medium-high heat for 2 hours or until beef is tender.
Add potatoes, carrots, sazón, oregano, cilantro, recao, cumin, salt, pepper and tomato paste, cook uncovered over medium-low heat for 20-25 minutes or until potatoes and carrots are tender.
Serve and enjoy! with the side dish of your choice.
