Ingredients:
- ½ cup beans of your choice
- ½ cup cooked lentils
- ½ cup cooked chickpeas
- ½ cup of corn
- ½ cup chopped cucumber
- ½ cup chopped tomato
- ¼ cup chopped onion
- ¼ cup chopped pepper
- ¼ cup chopped cilantro
- 2 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Let's prepare this delight!
Mix beans, lentils, chickpeas and corn in a large bowl. Add the cucumber, tomato, onion, bell pepper and cilantro to the grain mixture. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Add the dressing to the salad and mix well. Serve this Puerto Rican dish immediately or refrigerate until ready to serve.
